Polenta Rosemary Sourdough

What is Polenta? I get asked this question quite often. Polenta is a traditional dish of northern italy. Coarse ground cornmeal cooked down into a porridge served with butter, parmesan cheese, etc. Similar to grits but a different variety of corn. We use Red Floriani, a landrace variety grown in California. Its a lovely addition to bread, lending a sweetness and texture to the crumb. A touch of fresh rosemary pairs well. This is the bread for enjoying the bounty of summer.
